Make-Ahead Frozen Pizza

Make-Ahead Frozen Pizza

Makes two 12-inch pizzas

Dough
1 1/2 cups half-and-half , heated to 110 degrees
1/2 cup water , heated to 110 degrees
2 tablespoons extra virgin olive oil
4 cups all-purpose flour
1/4 cup cornstarch
1 envelope (2 1/4 teaspoons) instant or rapid-rise yeast
1/2 teaspoon baking powder
1/2 teaspoon sugar
1 1/2 teaspoons salt

Sauce and Toppings
1 (14.5-ounce) can diced tomatoes
1 tablespoon extra virgin olive oil , plus additional for brushing
1 tablespoon tomato paste
2 garlic cloves , minced
1 tablespoon dried basil
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes

Salt
3 cups shredded mozzarella cheese
1/4 cup Parmesan cheese , grated
1/4 cup half-and-half

1. MAKE DOUGH Adjust oven rack to lowest position and heat oven to 200 degrees. When oven reaches 200 degrees, shut it off. Grease large bowl. Combine half-and-half, water, and oil in liquid measuring cup. In bowl of stand mixer fitted with dough hook, mix flour, cornstarch, yeast, baking powder, sugar, and salt until combined. With mixer on medium-low speed, add half-and-half mixture in steady stream and mix until dough comes together, about 1 minute. Continue mixing until sticky strands form around exterior but center of dough is uniform in texture, about 5 minutes. Transfer dough to prepared bowl, coat lightly with cooking spray, cover with plastic wrap, and place in warm oven. Let rise until doubled in size, about 1 hour.

2. MAKE SAUCE Pulse tomatoes in food processor until coarsely ground. Heat 1 tablespoon oil in large saucepan over medium heat until shimmering. Cook tomato paste until just beginning to brown, about 2 minutes. Stir in garlic, basil, oregano, and pepper flakes and cook until fragrant, about 30 seconds. Add pulsed tomatoes and simmer until reduced to 1½ cups, about 10 minutes. Season with salt and let cool.

3. CONSTRUCT PIZZA Remove dough from oven and divide in half. Transfer each half to 12-inch disposable aluminum pizza pan and, using oiled hands, press dough to cover pan. Combine mozzarella, Parmesan, and half-and-half in large bowl and stir with rubber spatula until well combined. Top each pizza evenly with half of sauce and half of cheese, leaving ½-inch border around edges. Wrap each pizza tightly with plastic, then aluminum foil. Freeze up to 1 month.

4. BAKE PIZZA Adjust oven rack to lowest position, place pizza stone on rack, and heat oven to 500 degrees. Discard foil and plastic and remove frozen pizza from aluminum pan. Place pizza on large square of parchment paper and brush edges of dough lightly with oil. Transfer parchment and pizza to hot pizza stone. Cover pizza loosely with greased aluminum foil and bake until underside is golden brown and cheese is starting to melt, about 25 minutes. Discard foil and bake until crust is golden brown and cheese is completely melted, about 5 more minutes. Serve.

Millet Casserole


This was really good ... kind of like a creamy rice casserole. I'd add more seasoning and maybe some broccoli next time.

4 c. cooked millet
1/4 c. finely chopped celery
1/2 c. finely chopped onion
1/2 tsp. vegetable seasoning
2 c. diluted cream (1 part heavy cream to 3 parts water) (I use half & half)
4 eggs, well beaten
1 1/2 c. grated med. cheddar cheese
To well beaten eggs, add cream, chopped vegetables, seasoning and 1 cup cheese. Stir well into millet, pour into casserole and sprinkle with the remaining 1/2 cup cheese and paprika. Dot with butter and bake at 325 degrees for 30 minutes or until firm.
To cook millet:
4 c. boiling water
1 tsp. salt
1 1/2 c. millet
Turn on low heat and cook about 20 minutes.

You may be thinking, "so why are you cooking with millet?" Well, I read an article a while back on the health benefits of millet plus it is such an amazing grain. Look at this article:

Timmy is a boy after my own heart. He loves the outdoors, gardening and animals. Hence the fishing and the turtle cake. He told me recently, when I was lamenting leaving our big yard and big garden, that one day he would own a farm and I could come live with him. Awwwww! He is a great kid! We love you, Timmy!


Josiah's 17th Birthday! (SEVENTEEN ... are you kidding me?!)

We conspired with dear Michaela, Joe's best friend, to plan a surprise for Josiah's birthday. He is still in Colorado and we are way down south in Texas. Michaela came up with a wonderful plan. She bought tickets to The King and I at the Candlelight Dinner Theater. She told Josiah to dress up and be ready and off they went. Aren't they the cutest couple?! Josiah's tie was gift from Michaela for Josiah. He is so blessed to have Michaela for a friend. We love you, Michaela, and we love and miss you, Joe!!!!!

I felt a bit sorry for myself on Josiah's birthday with him being so far away. He wasn't here to take to Chick-fil-a or to make a giant chocolate cake for or to take to Barnes & Noble. Josiah is a great guy! He is a thinker, a dreamer and a philosopher. He is tender hearted to the broken and the lowly. He has a special touch with little kids that draws them to him. But, what I miss most about him, is that he laughs at my jokes and can joke right back at me. I can hardly wait for him to get to Texas this summer!

Elizabeth's 4th Birthday!

The Fairy Cake
This poor cake was quite the challenge. The cake itself turned out moist and yummy but when I assembled it I just had one issue after another. This might be due to the fact that I had both an AT&T tech here and neighbor kids being therefore interrupted maybe 1000 times or it might simply be because I was totally winging it and hadn't thought it all through. The back cracked so, to be funny, I just squirted leftover chocolate frosting in the crack ... which made it looked like the Fairies were enduring a mudslide for the sake of Lizzy's birthday ... which made it funnier and funnier. Oh, well, it tasted delicious.

All in all we had a great day. Mike and I took Lizzy to Market Street for a donut and bacon (what a smart girl). Then we all got ready to go to Build A Bear. Wouldn't you know the only purple creature they had was a Wizards of Wizardly Place bear! I let her get it but will toss the wand and cover the silly picture of whoever is in that show with fabric or fabric marker. Sheesh! It is a cute bear though. His fur is purple with little flecks of pink and sparkles. What four year old wouldn't want that?!

We left the mall and drove to the lake for our cook out ... in the rain. Being the incurable optimist I assured the kids that the pavilion was covered and that it wasn't supposed to thunder storm until 2:00. We hauled all of our cook-out supplies to the table only to see that they were drenched. Hmmmm, the kids were shivering and the girls were afraid that it would start lightening so I cried uncle and we drove home. Mike had pizza waiting for us so it wasn't so bad. The neighbor friends arrived soon after which certainly made up for the lost cook-out as Lizzy got to play with sweet Faith from down the street. While watching a movie with Faith she fell asleep on the floor, poor dear. We decided since we ate the birthday dinner (pizza) for lunch we'd take the kids to Chick-fil-a for dinner. It was really fun and a treat. We came home for presents and cake. Whew ... long day.

Today is Josiah's 17th Birthday. I can hardly type that. It is our first birthday with him away and it's sad and difficult. We sent him a giant box last week with an big Easter basket and presents for his birthday. I also made arrangements with his friend Michaela for a surprise tonight but still it's not the same as being with him. I miss him so much. He makes me laugh and he gets my jokes. One month to go and he'll be here. We'll spend the day cleaning and working so that we can enjoy tomorrow which is Timmy's birthday.

Week 2 of Crazy April ...

I think I was in denial last week. We casually began April, celebrating Mary's birthday, playing Chess, dancing the days away ... Friday came and I began to feel the rumblings of what April really is .. utter chaos. Here's a run down since Friday:

Friday night chess tournament with the boys returning at midnight.

4 hours of dance on Saturday not counting the 2 hours of driving back and forth.

A big shopping trip to get supplies for Luke's big trip to Nationals.

This morning I visited a new co-op ... loved it by the way and got the Volvo inspected for Texas plates and Mike took the van to do the same in the afternoon.

Still on the horizon before the month end:

New plates for both cars (long lines ...)
New drivers licenses (long lines ...)
Re-enactment of the Oklahoma Land Rush
4 Well-check appointments
4 more birthdays
Easter
Chess Nationals in Ohio
SW Regionals for Dance which includes a trip to Houston

There might me more but that's all that will fit in my brain. Oh, Timmy just reminded me we're going skating and to the grand opening of Cabela's on Friday ... goodnight.

Mary's 15th Birthday!

Mary radiates a gentle and sweet spirit. She has grown into such a lovely and, more importantly, godly young lady. We are so thankful for her and so proud of her!

Mary's very funky, Caramel Pecan Cake ... not perfect but quite tasty.

Mary and Luke worked together to make their famous Orange Chicken for dinner. I felt a little guilty watching Mary make her own birthday dinner but wow is she a good cook!
While Mary and Luke went to a movie at the mall the other kids and I decorated. Jacob made each plate a paper napkin butterfly and the 3 little girls picked flowers (ok, weeds) for each place. It all turned out very pretty

A new week with no sick kids ... is this too much to ask?

I had a dream last night that Lizzy woke up in the night throwing up and I thought, "And the sickness of the week will be the stomach flu." Why I dream and think like a game show announcer I don't know. But, it was just a dream and so far (it's only 10:00 a.m.) no one is sick. Whew.

Elijah is on antibiotics and a nebulizer which has helped him enormously. Our pediatrician from back-in-the-day saw us during his lunch hour! Thank you, Dr. Nale!

We had a great weekend. Mike, Lizzy and I went out early on Saturday to shop at the 2nd hand stores and had a blast. We found so many great deals! Easter dresses for Rachel and Lizzy for $1.99 ... super cute and a table with 4 matching chairs for the front room for $109.00 just to name a few! When we got home Mike finished painting the school room and it's lovely. Winston Churchill Hotel Ivory is the new color. It looks like butter. I love it! Today I hope to finish it up and take pictures.

Sunday was a wonderful day. We visited a new church which we really enjoyed and then went to Tartan Day at White Rock Lake in Dallas. The girls danced while we enjoyed the events and surroundings.

I didn't get any good pictures of Mary dancing so I'll leave that to your imagination. It was a really fun weekend!

Lizzy is just a hoot! There were more pictures of the backsides of kilts but I deleted those to protect the innocent. Don't you just love digital cameras!

This week isn't nearly as busy as last week. Tomorrow is Mary's birthday so I took the 6 littles (minus Elijah) shopping. Ben, Jacob and Timmy all spent their entire allowance ($5 each every two weeks) on gift cards for Mary. Ben got her one from Starbucks, Jacob got her one from Target and Timmy got her one from Quiznos. The little girls made her pictures and framed them for her room. We're hoping to make tomorrow a very special day for Mary. FIFTEEN ... ACK!
